The Once-ler's Storybrooke counterpart will be Owen Lerman - he's the town's resident tailor. His shop is called T. O. Lerman's and no one is entirely sure what the T is supposed to stand for exactly. He makes original pieces by hand and also does alterations and all the other things one would expect from a tailor. His specialty is handmade suits, but he'll make or alter pretty much anything you ask him to. He probably had big dreams of being an actual fashion designer but got laughed at his whole life and never actually made it out of his small town. Sigh.
For anyone who knows the Once-ler though, this is secretly a good story for him, even if he won't think so in the moment – it means he never got super greedy and never rose all the way to the top and ruined everything in his path. I blame his friendship with Regina. ANYWAY, to make up for it, he's going to be one of the first ones to totally lose it when the curse breaks, since his real memories will fill him with lots of invasive and horrible guilt! Even though all the trees in Storybrooke are obviously still there, but he'll still know he did something totally unforgivable and spend the last day and a half crying in the forest and trying to live in a treehouse he found (so if your kid had a treehouse in the woods, uh. ...Sorry. It's occupied.)
